When it comes to veggie consumption, you’ve probably heard, “Eat the rainbow.”

Well, this Colorful Quinoa Salad dish is a super simple way to do that. Quinoa is a seed that’s high in protein, fiber, and various vitamins/minerals.

This recipe makes for a great side dish — or top it with protein (chicken, fish, beef, etc.) and you’ve got yourself an attractive power bowl.

INGREDIENTS

  • 4 cups cooked quinoa, cooled (I used tricolor)

  • 1/2 medium red onion, chopped

  • 4-5 mini cucumbers, chopped

  • 4-6 mini bell peppers, chopped

  • About 3 stems of parsley, chopped

  • 1/3-1/2 cup feta cheese, or to liking

DIRECTIONS

  1. Drizzle dressing on quinoa and lightly mix
  2. Add chopped veggies and mix until just combined
  3. Mix in feta and sprinkle a bit more on top
  4. Enjoy!
