SIMPLE USE-WHATCHA-GOT TURKEY CHILI

I’m a big fan of making dishes that can be eaten throughout the week and/or frozen for later. Pulling a premade and homemade dinner out of the freezer when you’re in a time crunch is oh-so-wonderful. 🙌⠀⠀⠀⠀⠀⠀

This turkey chili is one of those dishes. The prep is SUPER simple and only requires ONE POT. Helloooo easy clean up.⠀⠀⠀

I used the ingredients I had on hand — feel free to use what you’ve got! Other add-ins that work well include white beans, pinto beans, and veggies like carrots and blocks of cooked sweet potatoes!

INGREDIENTS

1 pound ground turkey

1 can black beans

1 can kidney beans

1 can tomato sauce/chunks

2 tbsp avocado oil OR extra virgin olive oil

1 tbsp garlic, minced or finely chopped

½ large onion (any color), chopped

4-5 celery stalks

The following spices (measure to taste): pink Himalayan salt, black pepper, turmeric, red pepper, basil, and cumin

Topping options: shredded cheese, chives, chopped onion, greek yogurt

DIRECTIONS

1. Place oil and onion in a medium/large pot, and let sauté for a few minutes 

2. Add ground turkey, breaking it apart using a spatula

3. Toss in spices and cook until the turkey is mostly browned

4. Add all the remaining ingredients

5. Simmer on medium-low until bubbles start to form. Turn heat down to low and continue simmering for about 20-30 minutes, until the chili starts to thicken. Enjoy!
